happy cinco de mayo 2015

Southwest Egg Rolls w/ Baja Sauce, Guacamole,
Mixed Greens w/ Salsa, Sour Cream,
Spanish Rice, and Re-fried Beans
Southwest Egg Rolls

Ingredients:
1-2 cups Vegan Griller Strips
1 c black beans
1 c sweet corn
½ c diced red pepper
½ c diced zucchini
¼ c diced chili’s
½ c diced onion
½ c spinach
Egg Roll Wrappers
Cheese: Monterrey Jack, Cheddar Jack, or Smoked Provolone
Seasons: salt, pepper, cumin, chili powder, parsley, garlic powder, onion powder
Oil for frying

Directions:
Shred strips in a chopper. Saute vegetables and shredded griller strips. Allow to cool. Assemble egg rolls using 1/3 cup of mixture. Wrap and moisten edges with water. Seal. Fry.

Baja Dipping Sauce

1/2 Cup of Mayo
1/2 to 1 Cup of Sour Cream
1/4 Red Pepper
2 Cloves of Garlic
1/2 Jalapeno (depending on your spice level
1/4 of Spanish or Sweet Onion
1 teaspoon of White Vinegar
1/4 teaspoon of Cumin
Salt
Pepper
