Zucchini Flatbread Pizza (low carb)

Ingredients
1 large zucchini
3/4 c. mozzarella or Italian Cheese Blend (divided 1/2 c., 1/4 c.)
1 egg
2 T corn starch
red pepper flakes, salt, pepper, ranch seasoning, Italian Seasoning


Directions.  Preheat convection oven to 375 degrees.  Shred zucchini.  Add seasonings, egg, corn starch, and 1/2 c cheese.  Mix well.  Spread on parchment lined or non-stick baking mat.  Bake for 20-25 minutes.  Flip if you like and bake an additional 10 minutes to insure it is dried.  Sprinkle 1/4 c. cheese, bake for an additional 3-10 minutes or until melted.  Serve with Marinara or your favorite dipping sauces.

🍃Vegan Variant.  Substitute the egg for flax egg and add baking powder.  Substitute dairy for non-dairy.

Chickpea Croquettes, Green Beans, and Potato Hash

Ingredients
1 – 15 oz can organic chickpeas, drained, mashed
¼ c diced red pepper
¼ c diced celery
¼ c diced onion
1 T minced garlic
2 T minced carrot
½ c organic whole grain bread crumbs
3 T corn starch
1 jumbo egg or two large

Seasoning: old bay, salt, coarse black pepper, onion powder, Italian seasoning, fennel, cumin, ranch season, and dill

Preparation:
Sauté vegetables in oil. Mash chickpeas. It is okay to leave a few whole. Add vegetables, spices, breadcrumbs, cornstarch, and eggs.
Fry in medium hot oil on each side.  Remove and blot with paper towel. Serve with greens, potato hash, or whatever you like!

philly cream cheesecake (minis)

Ingredients
1 Large Muffin Pan (6 count)
6 large muffin liners
6 T butter
1 1/2 c graham cracker crumbs
2 8 oz packages cream cheese
1/2 c sugar
2 t vanilla
2 large eggs


Preparation
Preheat oven to 275-300 degrees (convection broiler).
Melt butter and mix with cracker crumbs. Place muffin liners in pan. Evenly distribute crumbs into each holder. Press with fingers. Chill.

With a stand or hand mixer, whisk cream cheese, sugar, vanilla, and eggs together. Add vanilla. Evenly distribute batter onto each cracker crust inside of muffin pan. Gently shake to level. Bake slow for 60 minutes or until cheese cakes rise and swell. Allow them to cool inside of the convection broiler for 10 minutes. Remove. Set at room temp for an additional 10 minutes. Refrigerate for 6-8 hours.

Topping
1 c strawberries
1 t corn starch
1/4 c water
1 T sugar

Bring to a boil, (mix corn starch in water) ingredients. Stir. Add more water if it is too thick. Reduce heat. Cover. Allow to simmer for 5 minutes. Cool. Pour over cheesecakes.

breakfast sandwich...anytime of the day

Ingredients
1 large egg
spinach
sliced tomato
diced red onion
vegan sausage (from textured soy)
cheese
2 slices gluten free bread

Preparation
Toast or grill one side of two bread slices. Heat vegan sausage. Saute spinach, tomato, and onion. Fry the egg. Assemble your sandwich. Served with an organic Valencia orange and decaf green tea!

acv rinse and homemade protein treatment

Once a month, I am aiming at balancing the ph in my hair and cleaning it from product buildup without a harsh wash. This process, by trial basis only would follow with a HOMEVEDA protein treatment.

Apple Cider Vinegar (ACV) rinse. After many views on YOUTUBE, it is best for 'relaxed' hair to only receive ACV rinses once per month. The current recipe for the ACV rinse for my hair volume is 1 to 4 ratio/using 1/4 cup of acv + 1 cup of water. I poured this into a spray bottle, sectioned my hair into fourths, and massaging acv into the scalp, on one section at a time. My hair was fully saturated before the mix bottle was empty. I then poured the remaining over my hair. The setting time was 10 minutes under a baggy.

After rinsing, my hair did not even look like my hair. I was pleasantly surprised and even for a moment wondered why I had never tried this before! The rinse closes the cuticles of the hair shaft allowing the strands to appear more shiny, as they reflect more light, but also improves manageability. Strands with open cuticles are easily tangled, unmanageable, and can lead to breakage.
Protein Treatment. Following this amazing ACV rinse, I mixed together [1 egg, 2 T soy milk, 2 T coconut oil, 2 T Aloe Vera]. With hair in four sections and using an applicator brush, I applied the treatment from root to ends. Covered hair with a baggy and a satin bonnet, then sat under a HOT dryer on MED temp. for 35 minutes. To remove egg, I co-washed with Suave Naturals Aloe and Water Lily, 2x. De-tangled, and applied the LOC method.
 
I have noticed an immediate marked difference and improvement. I will continue using this 1-2 punch! My hair loves it!
