Seitan Vegan Strip Fried Brown Rice

Seitan Strip Fried Brown Rice
*prepared Seitan (thawed)
*cooked brown rice (cold)
spring onion
onion
carrots
red pepper
green pepper
celery
bok choy
oil
soy sauce
mushroom soy sauce
vegetarian oyster sauce
salt
pepper
onion powder
red pepper flakes

Saute your seitan strips with onion.  Remove.  Saute vegetables.  Remove.  Fry cold brown rice.  Add spices and sauces.  Toss in seitan and vegetables.  Adjust season to taste.

Apple Smoke Tofu Bacon

Ingredients.

1 pkg of firm tofu. Froze. Thawed. Drained (Freeze this immediately to save you time later)
1 small granny smith apple, sliced
3 T Canola oil (any oil will do)
1 cup Light Soy Sauce or liquid amino's
2 T Turbinado Sugar or Brown Sugar
2 T Smoky Apple Wood Season/Smokehouse Maple Season

(to your taste, optional) Additional:
salt, cracked black pepper, onion powder, garlic powder, chives, all spice,

Apple Smoke Tofu Bacon

Directions.

Set oven to 450.  Mix oil, soy sauce, apples, sugar, and seasons.  Let it stand.  Cut tofu into thin slices, approximately 1/4" thick.  Pour half of your marinade into the bottom of a baking dish.  Place tofu slices into the marinade.  Pour the remaining marinade on top.  Cover dish with foil.  Bake at 450 degrees for 45 minutes.  Remove foil.  Bake an additional 15 minutes uncovered.  Turn oven off.  Allow to come to room temperature in the oven.  Remove.  Ready to Serve. 

For crispier or more chewy texture, reheat.

Store them up to a week in the fridge.  You may choose to freeze them in a baggie or plastic covered container.

Cream Cheese & Spinach Wonton's

...in time to throw together for your New Year's Eve countdown

I usually order pizza, but this year I decided on a delightful treat that I have not indulged on in many moons.  It is quite easy to throw together.  The recipe you probably have seen before.  But I am sharing my spin.  Hope you like it...

Ingredients
1 pkg of cream cheese, set at room temperature
1 pkg of frozen spinach, steamed or thawed, release water
1/4 c mozzarella cheese
pepper flakes, black pepper, sea salt, onion powder, garlic powder, Italian season, honey or raw sugar

Wonton Wrappers
warm water in a finger bowl
canola oil for frying
medium sauce pot

Directions:
Mix well, first three ingredients together with a fork.  Season to your taste.  Heat oil.  Moisten the perimeter of your wrappers with warm water, using a brush or your finger works fine.  Place a teaspoon portion of mixture onto the center of wrapper.  Fold diagonally or place another wrapper on top.  Seal edges.  Fry until brown.




Serve with your favorite sauce.  Pairs well with a grape juice virgin...or fermented!

homemade onion rings and sauce

1 large organic onion
cold water bath
gluten free bread crumbs
3 flax eggs
1/2 c oat flour
oil for frying
cookie sheet lined with wax paper
large zip lock baggie

Sauce: 
2 T mayo
1 T sour cream
1 t minced garlic
dash (onion powder, parsley, cumin, smoked red pepper, cayenne pepper)
pinch of salt

Slice onion into 1/2 inch thick slices. Separate the rings and drop into a cold ice bath to remove skins. Place rings into baggie. Shake with oat flour to coat. This layer will help flax egg to stick. Next, dip each ring into flax egg, and last into bread crumbs. Shake off excess. Place rings onto lined cookie sheet. Place into freezer to set. I make these in batches and store into a large baggie. This way when I want rings I can just pull a few out and bake or fry.
