Apple Smoke Tofu Bacon

Ingredients.

1 pkg of firm tofu. Froze. Thawed. Drained (Freeze this immediately to save you time later)
1 small granny smith apple, sliced
3 T Canola oil (any oil will do)
1 cup Light Soy Sauce or liquid amino's
2 T Turbinado Sugar or Brown Sugar
2 T Smoky Apple Wood Season/Smokehouse Maple Season

(to your taste, optional) Additional:
salt, cracked black pepper, onion powder, garlic powder, chives, all spice,

Directions.

Set oven to 450.  Mix oil, soy sauce, apples, sugar, and seasons.  Let it stand.  Cut tofu into thin slices, approximately 1/4" thick.  Pour half of your marinade into the bottom of a baking dish.  Place tofu slices into the marinade.  Pour the remaining marinade on top.  Cover dish with foil.  Bake at 450 degrees for 45 minutes.  Remove foil.  Bake an additional 15 minutes uncovered.  Turn oven off.  Allow to come to room temperature in the oven.  Remove.  Ready to Serve. 

For crispier or more chewy texture, reheat.

Store them up to a week in the fridge.  You may choose to freeze them in a baggie or plastic covered container.

meatless pasta bake

Pasta Bake with Honey Butter Yeast Roll
Ingredients
4 cups uncooked whole grain penne pasta
2 6 oz. tubs Greek Yogurt/Cream Cheese
1-2 c. soy milk
2 T butter
red pepper flakes, salt, paprika,
small onion sliced
2 -3 cups of fresh spinach
browned/fried cubed tofu
sun dried tomato (used my dehydrator but you can use your oven set below 200 for up to 6 hours.
6 oz grated Parmesan cheese
1 c mozzarella, Havarti, or provolone for top

Preparation
Preheat oven to 350 degrees.  Bake for 45 minutes.
Boil pasta al dente.  In a skillet with olive oil, sauté onion, garlic, dried tomato, and browned tofu.  In a sauce pot add butter, yogurt/cream cheese blend, soy milk, red pepper flakes, salt, and paprika.  Bring to a boil, reduce to simmer.  Rinse and dry your pasta.  Oil a large glass or ceramic baking dish.  Pour 1/3 c. of the cream sauce on bottom of baking dish.  Place 1 cup of spinach on top of the sauce.  Next add half of pasta, sprinkle Parmesan cheese, and then tofu/onion mix.  Repeat.  Sprinkle Mozzarella on top.  Bake covered in foil.  Toss pasta to mix cheesy sauce if necessary.  Serve hot.  It serves best when reheated.

sweet 'n sour tofu (chicken flavored)


Prepare tofu overnight to freeze. This will produce a chewy texture, similar to chicken. This recipe is for 1 cup of sliced tofu.

1 cup of sliced or cubed extra firm tofu, drained
2 T Weber Roasted Garlic & Herb Seasoning
2 T Chicken flavored powdered broth
Zip lock bag

Slice Tofu into small cubes ½ inch squared or slice into strips. Place into boiling water for 15 minutes. Remove. Cool. Press between paper towels to remove excess water. Place in into a shaker bag. Add Seasoning and Chicken flavored powdered broth. Place into freezer. Thaw your tofu when ready to prepare.


For crispy tofu:
prepared, thawed tofu
½ cup all-purpose flour or Corn starch
1 raw egg
Cooking oil

For sauce:
2 T soy sauce
2 T vinegar
2 T brown sugar
3 T ketchup (to taste)
1 T cornstarch (For thicker sauce, use 2-3 T)
¼ t sesame oil (optional)
½ cup water or chicken stock
¼ cup orange juice

For vegetables:
2 stalks green onion, cubed
1 small onion, cubed
1 green bell pepper, cubed
1/2 small carrot, thinly sliced
2 cloves garlic, chopped


Whisk egg and pour over tofu. Add flour gradually (or corn starch). Mix well until sticky and shiny, break loose pieces of tofu and drop into hot oil 350 degrees. Fry for 5-7 minutes.

They will start to brown. Drain.

Mix water and Corn Starch. Add this and remaining ingredients to sauce pot. Whisk over medium to low heat. It will change from cloudy to translucent. Add more water if too thick. Remove from heat.

Sauté vegetables in a few drops of oil over medium heat for about 5 minutes. Pour in sauce. Combine fried tofu. Mix until all pieces are covered.

Serve with Egg Roll, crab meat cheese rangoon, and vegetable fried rice.
