banana oat pecan waffles

1/2 c oats
1/2 c oat flour
1 c ap flour...
2 T flax meal
1 T baking powder
1 t baking soda
1/2 t salt
1/2 t vanilla flavor
1/2 banana mashed (1/2 for garnish)
pecan pieces (for garnish)
1 c almond milk
3 T oil

Mix ingredients well. Let stand for 1/2 hour covered. Heat griddle. Batter will be thick. You want this!
(served with fried cauliflower wings)

multi grain eastern naan (mediterranean pita)

Ingredients
1/2 c whole wheat flour
1/2 c all purpose flour 
1/4 c oat flour
1 T baking powder
1/4 t baking soda
1/2 t garlic powder
1/4 t salt
1/4 t sugar
1 T dried parsley
2 T olive oil 
1/4 c warm water
1/4 c yogurt room temp (I used Greek Chobani plain)

small skillet
flour for dusting/kneading
rolling pin
waxed paper

for garnishing
2 T butter melted
1 T olive oil
1 T minced garlic
1 T dried parsley
pastry brush

Preparation. Mix ingredients together. Knead dough for 2-3 minutes. Brush with oil. Cover for 30 minutes. Divide into four sections evenly. Knead each section. Roll with rolling pin until it stretches into a 5-7 inch disc. Heat each side in a covered skillet until brown. Brush with garnishing and cover each loaf with waxed paper. Makes four flat naan or pita.

cauliflower wings & blueberry-oat-flax waffles (gluten free, vegan)

Vegan Wings & Waffles
Belgian Waffle Mix
1 c. soy flour
2 c. oat flour
1 T sugar
½ t salt
1 T flax/2 T hot water (flax egg)
1 T baking powder
1/2 c almond milk
carbonated water
2 T olive oil (you can season your griddle with 1, but add at least one to your batter)
1 t vanilla flavor
blueberries & maple syrup

Cauliflower Wings Batter
soy flour, corn flour, flax, hot water, vinegar, almond milk, soda, garlic powder, salt, pepper, oregano, basil, onion powder

Use soy flour or corn flour for dusting pieces after dipping them into the batter. Fry until golden brown.

You can pre-bake your cauliflower pieces but it is not necessary to achieve a tender on the inside, crunchy on the outside vegan wing that is oh-so-delicious!

homemade onion rings and sauce

1 large organic onion
cold water bath
gluten free bread crumbs
3 flax eggs
1/2 c oat flour
oil for frying
cookie sheet lined with wax paper
large zip lock baggie

Sauce: 
2 T mayo
1 T sour cream
1 t minced garlic
dash (onion powder, parsley, cumin, smoked red pepper, cayenne pepper)
pinch of salt

Slice onion into 1/2 inch thick slices. Separate the rings and drop into a cold ice bath to remove skins. Place rings into baggie. Shake with oat flour to coat. This layer will help flax egg to stick. Next, dip each ring into flax egg, and last into bread crumbs. Shake off excess. Place rings onto lined cookie sheet. Place into freezer to set. I make these in batches and store into a large baggie. This way when I want rings I can just pull a few out and bake or fry.

peanut butter cookies


Ingredients 

1/2 cup unsalted butter or margarine
1/2 cup creamy peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
3/4 cups all-purpose flour
3/4 cups oat flour
1/2 teaspoon baking powder
1/2 teaspoon kosher salt (or 1/4 tsp fine table salt)
1/2 teaspoons baking soda

Bake at 350 degrees F. for 10 minutes on a lined cookie sheet (parchment or silpat).

chocolate chip cookies

I cannot take credit for this recipe. Although I have been baking Oatmeal Chocolate Chip cookies for years, it was Chef Kendra who inspired me to venture to oat flour to give those cookies that 'je ne sais quoi'. 

The cookies turned out marvelous and my new stand mixer had the pleasure of being the first to test run this amazing recipe. I thought I would share. 


1 c Oat flour (ground this flour from organic hard rolled oats)
1 c flour
1 c + 2 T milk chocolate chips (I used Toll House)
½ c butter (or margarine)
1/3  c brown sugar
1/3  c sugar
1 egg
2 t vanilla extract
½ t baking powder
½ t baking soda
½ t salt
Preheat oven to 325 degrees. Line a baking sheet with a silpat or parchment paper. Cream butter and sugar together in a bowl using a hand held electric mixer, or a stand mixer with paddle attachment.
When it’s creamy add the vanilla and egg and blend that in.
In other bowl mix the oatmeal flour, all-purpose flour, baking soda, baking powder and salt. Slowly mix the dry into the wet ingredients.
Stir in chocolate chips by hand. 3 T for each cookie, measure out cookies and place on prepared baking sheet about 3 inches apart. Flatten a little bit with your palm. Put baking sheet with cookies in refrigerator for 20 minutes before baking.

Bake for 17-22 minutes. Remove to a cooling rack to cook. Enjoy.

make your own oat flour


Oat flour is quite heart healthy nutritious, but it’s so expensive to buy. Here’s a solution! Purchase a canister or package of oats then pulverize them in your coffee grinder or blender. I have in the past used a blender and found it up to the task of making flour. If you want better, make an investment in a coffee grinder. I have never ground any beans in my grinder. I mostly use it for oats and flax seeds.

From oat flour I have made: Belgian waffles, dry coatings for fish and tofu, along with bulking up meal shakes.

banana carrot oat grain muffins

Ingredients


1½ cup of oat flour
1 tea spoon of baking soda
1/8 cup cider vinegar
pinch of salt
1 cup carrots, grated or finely shredded
1-2 banana, mashed
½ cup of raisins
¼ cup baking splenda
1 egg, whisked
¼ cup of milk
¼ cup hot water
1 T ground flax
¼ cup crushed walnuts
¼  cup of canola
1 T cinnamon
½ t ground cloves

Preheat oven to 350 degrees. Place muffin liners in a muffin tin. Place Walnuts and Raisins aside. Mix dry ingredients. Mix wet ingredients. Combine dry with wet. Fold nuts and raisins. Bake @ 350 for 20 minutes or until toothpick comes out clean.
